- 1st Course.
Chef Canapes. Homemade cheese, Broiled shrimp with "chipotle" chili mayonnaise or Goat Cheese crouton with honey.
- 2nd Course.
Green cebiche (Marinated Raw fish and Shrimp in avocado sauce), Beef "Carpaccio" (Thin slices of raw beef sprinkled with cotija cheese) , Tomato Duet with "Oaxaca" cheese (Natural, dehydrated tomatoes with fruit "pesto" dressing) or Cream of smoked Oaxaca Cheese.
- 3rd Course.
Shrimp in tamarind sauce (Accompanied with "Mexican" style rice and a prickly-pear pad stuffed with basket cheese) , Chicken breast (Stuffed with goat cheese, bacon, and herb in "Chipotle" sauce) or Grilled Flank Steak (In red wine mushroom sauce, served with cornstarch and grilled vegetables).
- 4th Course.
Blackberry Chocolate Tart, Cheese Mousse glazed with red berries, Mexican Sorbets or Guava Cheese Mousse.
- Starters. Fruit rainbow (Seasonal fruit-stacked sticks with strawberry yoghurt sauce) , "Garden of sun" salad (Lettuce, tomato, fresh cheese, ham and honey dressing) or "Confetti" salad (Pasta in a creamy sauce, pineapple, ham and nuts).
